Chef in Residence Menus, 2021
This menu and accompanying calendar wheel were designed for a visiting chef that combined his Cantonese heritage, Danish hometown, and the abundance of the Hudson Valley. The calendar showed growing and harvesting times for key ingredients in all three locations. The menu was kept minimal and took inspiration from Zodiac placemats seen in Chinese restaurants.
Menus
This menu was created for a visiting chef from Peru. The design incorporated Peruvian poetry and illustrations of seaweed, an ingredient predominantly featured in the meal. A screenprinted bookmark was included as a takeaway, printed on knotweed paper, another key ingredient.
For a visiting chef from Mexico City, we created a multi-panel fold out that included both the menu and more details regarding the area’s history and cooking philosophies. We also designed training cards for key ingredients featured throughout the meal, which included specific peppers and different insects. The presentation was sealed with a vellum band. As a takeaway, guests were given “soil truffles” that when planted, would generate a salad, as the final bite of the meal. The packaging also included a pouch with a spice mix that could be using to create a dressing for the salad, as well as instructions.
